Easy Chocolate Muffins

Quick and yummy chocolate muffins that melt in your mouth!

Ingredients
  

  • 2.25 cups Self-raising flour
  • 1/2 cup Cocoa powder
  • 1 cup Caster sugar
  • 3/4 cup Milk chocolate bits Can use dark or white chocolate
  • 1/2 cup Vegetable oil
  • 2/3 cup Milk
  • 1 tsp Vanilla extract Vanilla essence is fine
  • 2 eggs

Method
 

  1. Preheat oven to 180°C/160°C fan-forced. Line a 12-hole muffin pan with paper muffin cases.
  2. Combine flour, cocoa powder, sugar and your chocolate bits in a bowl. In a separate bowl, whisk together the vegetable oil, milk, vanilla and eggs. Add oil mixture to your dry ingredients. Using a wooden spoon, stir until just combined. Spoon mixture into paper cases.
  3. Bake for 25 minutes or until firm to touch. Allow to cool. Eat!
